Australia Day came yesterday, but we were too busy deciding "Who's Your Bastard" to do justice to the day. So, our celebration happened this evening, with a fine Aussie-style feast. Which means lamb. A simple rack O' lamb, spiked with garlic cloves and rosemary, seared, then roasted on high for about 20 minutes until pink and succulent .....accompanied by onion confit, stewed tomatoes and steamed spinach. Beers? Mr Cicerone's excellent Imperial Pils as our aperitif, and the aptly named Matilda accompanying the lamb....
Sipping on Mr Cicerone's porter right now as I type this, while contemplating watching "The Castle", one of our favourite (Australian) movies....
